Why yield varies so much between cheeses

The same 10 liters of milk can produce a little over a kilogram of cheddar or well over a kilogram and a half of fresh paneer, and the difference has almost nothing to do with the milk and everything to do with how much water the finished cheese is allowed to hold. Fat and casein are what actually get captured in the curd; moisture is what dilutes that captured solid into a bigger or smaller final weight.

That's why richer, higher-fat milk always yields more cheese from the same volume, and why a fresh cheese recipe reads so generous compared to a long-aged one. Knowing the rough number in advance helps you plan how much milk to buy for a target batch size, or sanity-check whether a disappointing yield points to a technique problem worth troubleshooting.

What is the Van Slyke formula?

It's the classic dairy-science formula for estimating cheese yield from milk composition, published by Van Slyke and Price in 1949 and still taught as the standard back-of-envelope estimate: Y = [(0.93 × fat% + casein% − 0.1) × 1.09] / (1 − moisture fraction). It accounts for the fat and casein retained in the curd and the moisture the finished cheese holds onto.

I only know my milk's protein %, not casein % — what do I enter?

Casein normally makes up about 78% of the total protein in cow's milk, with whey protein making up the rest. This calculator takes your protein % (the figure printed on most milk cartons or lab sheets) and estimates casein % automatically using that 78% share.

Why does target moisture matter so much?

Moisture is the biggest lever in the whole formula. A fresh, high-moisture cheese (55-60% moisture) yields far more finished weight per liter of milk than a long-aged hard cheese pressed and dried down to 30-35% moisture — you're keeping more of the milk's water, not more of its solids.

Why did my actual yield come in lower than the estimate?

The formula assumes efficient, complete recovery of fat and casein into the curd. In practice you lose some fat and fine curd into the whey, especially with an imprecise cut, a rushed cook, or a coagulant that didn't fully set — so real yields typically run a little under the theoretical figure, more so for beginners.
