How Much Weight Your Cheese Loses in the Cave
A cheese going into the cave and the same cheese coming out are different weights, and the difference is entirely water. Nothing else leaves. The dry matter — protein, fat, minerals, salt — is exactly what it was on day one.
That single fact makes the arithmetic exact rather than approximate, which is unusual for anything in cheesemaking.
The calculation
If dry matter is conserved, then:
dry matter = initial weight × (1 − initial moisture)
final weight = dry matter ÷ (1 − target moisture)
That is what the aging calculator computes. A 1,000 g cheese at 50% moisture holds 500 g of dry matter. Dry it to 38% moisture and that same 500 g now represents 62% of the wheel, so the wheel weighs 500 ÷ 0.62 = 806.45 g. It lost 193.55 g, or 19.35% of its starting weight.

Notice how non-linear this is. Going from 50% to 45% moisture — five percentage points — costs 9%. Going from 50% to 38% is twelve points and costs 19.35%. The further you dry, the more each additional point costs, because you are dividing by an ever-smaller number.
Why this matters before you start
You can plan the finished size. If you want a 1 kg aged wheel at 38% moisture, you need to press roughly 1.24 kg of fresh cheese at 50%. Working that out afterwards is too late.
You can price it honestly. A quarter of the weight disappearing over six months is the main reason aged cheese costs what it does. The milk, the labour and the cave time all bought a wheel that is now three-quarters of its original size.
You can diagnose the cave. This is the most useful application. Weigh the wheel periodically and compare the actual loss against the prediction:
- Losing faster than expected — humidity is too low. The rind hardens prematurely and can case-harden, trapping moisture inside and leaving a wheel that is dry outside and wet within.
- Losing slower than expected — humidity is too high. The surface stays damp, which invites the growth you did not intend, and unwanted moulds and slime become likely.
Weight is the cheapest instrument you have for reading a cave. A set of kitchen scales and a note of the date tells you more about your humidity control than a hygrometer alone.
Humidity is the control, temperature is the constraint
The aging guide's reference table gives published temperature and humidity ranges by broad style, and the two variables do different jobs.
Relative humidity sets the drying rate, and it is the one you adjust when the weight trend is wrong. Higher humidity slows loss; lower speeds it.
Temperature is not a rate dial to optimise. Aging temperatures are low — commonly in the region of 10–13°C for many styles — because that range balances flavour development against keeping unwanted growth slow. Running the cave warm speeds up everything in it, including the organisms you did not culture on purpose.
If a cheese is aging slower than you would like, the answer is patience or a different style, not a warmer cave.
What the model leaves out
The arithmetic is exact; the inputs are not.
You rarely know the starting moisture precisely. Most home makers estimate it from the style, and an error there propagates straight through. If your fresh cheese was 53% rather than 50%, every prediction shifts.
Loss is not uniform through the wheel. The surface dries first and a rind forms, which then slows further loss from the interior. The formula treats the cheese as homogeneous, which it stops being early on.
Rind treatment changes everything. Waxing, vacuum-sealing or a heavy natural rind all alter the rate dramatically — a waxed wheel loses very little regardless of what the cave is doing.
Loss is not linear in time. The rate is fastest early, when the moisture gradient is steepest, and slows as the cheese approaches equilibrium with the cave. A wheel that lost 5% in its first month will not lose 5% in its fourth.
A practical weighing routine
Weigh the wheel when it goes in, and write the figure on the cave log with the date. Weigh weekly for the first month, then monthly.
What you are looking for is the shape of the curve rather than any single reading: a steep early drop flattening out is normal, a straight line suggests the cave is dry enough to keep pulling moisture through a rind that should be slowing it, and a flat line from the start suggests the humidity is high enough that nothing is happening.
And one safety note that belongs here rather than in a footnote: a wheel that is not drying, in a cave that is running damp, is the condition under which surface growth you did not want becomes likely. If the weight is not moving and the surface is tacky, that is worth investigating rather than waiting out.
