Building a Cheese Cave: Temperature and Humidity at Home
Making the curd is only half the job for most cheeses — the other half happens slowly, over weeks or months, in whatever space you set aside to age it. Getting that space right is often the difference between a cheese that develops properly and one that dries out, sweats, or grows the wrong kind of mold before it's ready.
Why aging conditions matter so much
A cheese continues to change chemically and biologically long after it leaves the vat: enzymes keep breaking down proteins and fats, bacteria and molds on or inside the cheese keep working, and moisture slowly migrates out through the rind. Temperature controls how fast all of that happens, and humidity controls how fast the cheese loses moisture and whether its surface stays hospitable to the rind culture you actually want, rather than to random airborne mold.
Typical ranges by style
Most hard and semi-hard cheeses like cheddar and gouda age best around 10-13°C (50-55°F) with 80-85% relative humidity — cool cellar temperatures with air that's damp but not dripping. Soft, bloomy-rind cheeses like brie and camembert want a similar temperature but noticeably higher humidity, often 90-95%, to keep the surface mold happy and the rind from cracking during its short few weeks of ripening. Hard grating cheeses aged a year or more, like a parmesan-style wheel, are often held slightly warmer, in the 12-15°C range, with somewhat lower humidity around 75-80% for a long, slow moisture loss.
The wine-cooler solution
Very few home cheesemakers have an actual cellar sitting at a steady 11°C, which is why a small thermoelectric wine cooler has become the default home cheese cave. Standard kitchen refrigerators run far too cold (typically 1-4°C) and far too dry for most aging cheeses, but a basic wine cooler's thermostat usually adjusts into roughly the right range, and the enclosed space is much easier to hold at a controlled humidity than an open shelf. It won't perfectly replicate a stone cellar, but it reliably gets most home-scale cheeses through their aging window.
Managing humidity in a small space
Even with the right box, humidity tends to drift, and it's worth checking daily with a simple hygrometer until you know your setup's habits. If the cave is running too dry, a shallow tray of water, a damp (not dripping) sponge, or a small ultrasonic humidifier are all common low-tech fixes. If it's running too damp — visible condensation, or a cheese that feels slimy rather than just moist — cracking the door for a few minutes a day, adding a passive vent, or placing an open container of coarse salt (which naturally absorbs some ambient moisture) can bring it back down.
Turning and brushing
A cheese aging on a single flat side will develop unevenly and can trap moisture underneath it, so most hard and semi-hard cheeses need turning — daily at first, then every few days as they firm up. Many also benefit from a light brushing or wipe-down with a light brine or vinegar solution to discourage unwanted surface mold while the intended rind or bloom develops. Skipping this step is a common reason a cheese that started out fine develops a patchy, off-colored surface partway through aging.
Reading the weight loss
Because aging works by driving moisture out through the rind, a cheese noticeably lighter after a few weeks or months than it started isn't a sign something went wrong — it's the expected outcome of losing water while the dry matter (protein, fat, minerals) stays behind. Roughly estimating that expected weight loss in advance, from your starting weight and moisture down to a target moisture, helps you tell the difference between normal aging shrinkage and a genuinely too-fast, too-dry cave that needs adjusting.
