Why does a cheese lose weight as it ages?
A cheese ages by slowly losing moisture through its rind — the protein, fat, and minerals stay put, but water evaporates. That's why an aging cheese needs to sit somewhere with a controlled, fairly high humidity: too dry and it cracks or dries out faster than intended; too damp and it can't lose moisture at all.
How is the final weight calculated?
By assuming the dry matter (everything except water) doesn't change during aging. From your starting weight and moisture, the calculator works out the dry matter, then divides it by (1 − target moisture) to get the finished weight — the same principle used to explain why a drier target cheese ends up noticeably lighter than a moist one, even from the same starting wheel.
Do I really need a dedicated cheese cave?
Not necessarily a cellar — many home cheesemakers use a small thermoelectric wine cooler with the thermostat adjusted, since it holds a steady temperature in roughly the right range and is far easier to control than a kitchen cupboard or a household fridge (which is usually too cold and too dry for most aged cheeses).
What if my cave's humidity keeps drifting?
A shallow tray of water, a damp sponge, or a small ultrasonic humidifier inside the cave are common low-tech fixes for pushing humidity up; a cracked-open door or a passive vent helps bring it down if things are running too damp. Check daily until you know how your specific setup drifts.
