Food Safety in Home Cheesemaking: The Non-Negotiables
Cheesemaking is a controlled fermentation. You are deliberately encouraging bacteria to grow in a warm, wet, nutrient-rich medium, and the whole craft consists of making sure the ones you want outcompete the ones you don't. Most home cheesemaking writing covers the first half of that sentence and skips the second.
This page is the second half. None of it is complicated, and none of it is optional.
Start with milk you know
Pasteurised milk from a shop is the straightforward option and the one to learn on. It has had the pathogen load dealt with before it reaches you, which removes the largest single variable from a beginner's make.
Raw milk is a different proposition. It can make excellent cheese and is traditional for many styles, and it also carries the possibility of Listeria monocytogenes, Salmonella, E. coli O157 and Campylobacter — organisms that pasteurisation exists to remove. If you use it, the sourcing matters enormously: a dairy that tests its herd and its milk, cold chain maintained throughout, and milk used fresh rather than after a few days in a fridge.
Legal status varies widely by country and by state or region, and so do the rules on selling cheese made from it. That is worth checking where you are rather than assuming.
One thing to be clear about: a milk carton's fat and protein figures are a data source, not a safety indication. If you are using raw milk because the farm gives you an actual milk-testing report and that makes your yield estimate more accurate, that is a genuine benefit — and it says nothing whatever about the microbiology.
Ultra-pasteurised milk is a separate problem
Worth knowing early because it wastes a lot of beginners' first batches: UHT or ultra-pasteurised milk generally will not set a proper curd. The heat treatment denatures the whey proteins in a way that interferes with rennet coagulation, and no amount of extra rennet reliably fixes it.
This is a functional problem rather than a safety one, but it produces the same outcome as a failed make and gets misdiagnosed as bad rennet constantly. Check the carton before you check anything else.
The 60-day rule, and what it does and does not mean
In the United States, cheese made from unpasteurised milk must be aged at least 60 days at not less than 35°F (about 1.7°C) before it can be sold. Similar reasoning underlies rules elsewhere, though the specifics differ.
The premise is that time, salt, acidity and falling moisture together make the cheese progressively more hostile to pathogens. The important qualification: 60 days is a regulatory threshold, not a sterilisation step. It does not guarantee safety, it is not equally protective across all cheese styles, and it is least reassuring for high-moisture cheeses, which are exactly the ones where the risk is highest to begin with.
The practical reading for a home maker: fresh, soft, high-moisture cheeses made from raw milk are the highest-risk combination available, and are the last thing to attempt rather than the first.
Who should not eat the results
This is the part most cheesemaking material leaves out entirely, and it is the part with the clearest consequences.
Soft and unpasteurised cheeses carry a well-documented listeriosis risk that is far more serious for some people than others. Public health guidance in many countries advises that pregnant people, infants and young children, adults over 65, and anyone whose immune system is compromised avoid soft, mould-ripened, blue-veined and unpasteurised cheeses.
Listeriosis in pregnancy is uncommon and can be severe, including miscarriage and stillbirth — which is why the advice is unusually firm for something that sounds cautious. If you make cheese and share it, the people you share it with cannot assess this for themselves unless you tell them what it is made from and how long it aged.
Label what you give away. Milk type, style, and date made. It costs nothing and it lets someone make their own decision.
Sanitation is the whole game
Clean is not the same as sanitised. Clean removes visible soil; sanitising reduces the microbial load on an already-clean surface. Both, in that order, every time.
- Everything that touches milk or curd — pot, spoon, ladle, knife, thermometer, moulds, cloths, draining mats, your hands.
- Wash first, sanitise second. Sanitiser applied over milk residue is largely wasted; protein and fat protect the organisms underneath.
- Rinse where required. Some food-grade sanitisers are no-rinse at a stated concentration and some are not. Follow the product's own instructions, including its contact time, which is the part people skip.
- Chlorine and rennet do not mix. Dilute rennet in cool non-chlorinated water — chlorine can degrade the enzyme, which turns a sanitation habit into a failed set.
- Wooden boards and porous surfaces are traditional and demand more attention, not less. If you cannot properly clean something, it should not be in the process.
Temperature is a control, not a preference
Two ends of the make matter for different reasons.
During the make, the recipe's temperatures are chosen so your culture outcompetes everything else. Milk sitting warm for hours without an active, acidifying culture is an incubator, and that is the state to avoid rather than any particular number.
In the cave, aging temperatures are deliberately low — typically in the region of 10–13°C for many styles — and that range is a compromise between flavour development and keeping unwanted growth slow. Running a cave warm to speed things up speeds up everything, including the parts you did not want. Acidity is doing safety work
The acidification you track through a make is not only about flavour and texture. Falling pH is one of the hurdles that makes the cheese inhospitable, alongside salt and reducing moisture.
Which is why a make that fails to acidify properly is a safety problem and not just a disappointing one. If your culture was old, or the milk was ultra-pasteurised, or the temperature was wrong, and the acidity never developed — that batch has lost one of its main defences. When to throw it away
The hardest rule, because a wheel represents hours of work and several litres of milk. Discard, rather than trim or wash, when:
- The make never acidified — the curd stayed sweet and slack when the recipe expected it to firm and sour.
- You find pink, orange, black, or fuzzy grey growth on a cheese that was not meant to develop it, or any mould at all on a soft or fresh cheese.
- The smell is putrid, ammoniacal beyond the style, or reminiscent of vomit or faeces rather than of cheese.
- The cheese is slimy or weeping in a way the style does not call for.
- It was left at room temperature for an extended period at any stage, and you are unsure how long.
Surface mould on a firm, aged cheese can often be cut generously away — the convention is a wide margin, well beyond the visible growth. On a soft or high-moisture cheese, mould is not a surface phenomenon and cutting does not help.
If you are weighing up whether something is fine, that uncertainty is itself the answer. The cost of discarding a batch is a few litres of milk and an afternoon. The cost of the alternative is not comparable, and no calculator on this site can assess it for you.
