Finished moisture is the single largest lever in cheesemaking arithmetic. It sits in the denominator of the yield formula and again in the aging calculation, so a few percentage points move both how much cheese you get and what it weighs months later — in opposite directions. Reading the table
Yield and drying pull against each other. A wetter cheese gives you more finished weight on the day — 13.91 kg per 100 kg at 55% against 10.1 kg at 38% — and a drier cheese is the one that keeps its weight, because it has already lost the water. Read the two right-hand columns together and the apparent advantage of a high-yield style largely disappears over an aging period.
Drying is not linear. Taking a wheel from 50% to 45% costs 9.09% of its weight. Going on to 38% costs 19.35%, and to 30% costs 28.57%. Each further point is dearer than the last, which is a large part of why long-aged cheeses are priced as they are.
Buy milk from the right-hand side of the table. A kilo of firm cheese at 38% needs about 9.9 kg of milk; the same kilo at 55% needs about 7.19 kg. Working that out before shopping is the difference between a wheel worth aging and an awkward small one.
A note that belongs with any yield figure: higher moisture is not simply better.
